Holiday Leftovers Recipe Contest: Last opportunity to submit your recipes!




The Holiday Leftovers Recipe contest ends Dec. 31, so make sure to get in your recipe entries by then. Those who share recipes will be automatically entered into a prize drawing, with contest winners announced on Jan. 3. Prizes include Lion & Owl and BRING gift certificates, free enrollment in Oregon State University Extension Master Food Preserver workshops, and a collection of sustainable products from Main Street Market.

An alternate way to use up turkey, and green bean or rice side dishes from Thanksgiving!

Recipe directions

Ingredients:

1 can cream of mushroom or cream of chicken soup

2-3 cups cooked green beans

1-2 cups cooked turkey (optional)

1/2 cup milk or milk substitute

1 cup cheddar cheese, grated (optional)

1-2 cups rice pre-cooked


Steps:

1. Preheat oven to 425 F

2. In a pot over medium heat, combine cream soup and milk until heated through. Add 1/2 cup cheese and stir until melted.

3. In a 9x13 casserole dish, layer rice, green beans, and turkey. Pour cream sauce and stir lightly to combine

4. Top with more cheddar cheese if desired

5. Bake for 20 minutes. Finish by broiling top of dish to brown the cheese (optional)
